I get some weird reactions when I say I make soup out of avocados. But I can assure you that you will love this one.
Well, that's also the reaction I got when I first tasted avocado soup. It was at a friend's house years ago, when her mum had leftovers from a dinner party. It was love at first taste.
This soup is pretty easy work, and it requires next to nothing when it comes to ingredients. The best thing about this soup is that it fills you up in a good way, leaving you satisfied.
Easy Avocado Soup

2 ripe avocados
500 ml water
1 cube vegetable stock
200 ml crème fraîche
Mash the avocados into a paste using a hand blender. Pour the paste into a sauce pan along with the water, vegetable stock, salt and pepper. Heat on medium temperature, stirring occasionally.
Add the crème fraîche. Continue stirring for a few minutes until the soup is warm and creamy. If necessary, season with more salt and pepper.
Serve with fresh bread and butter.
